My dad's birthday was on Monday, and we were able to spend some time together as a family over the weekend...and I, the non-baker/non-cook, actually baked a cake! It wasn't entirely from scratch, but it was double-layer and involved more than just plain frosting! It looked really pretty when it was done, and tasted great too!

| Completed Lemon Cake! |
Of course I consulted Pinterest to find this recipe, because let's be honest, Pinterest
never rarely fails you. (See
this post for my personal project fail...a project I have yet to complete, I might add.) I followed the recipe from the pin, which was originally from
allrecipes.com. Using your basic cake mix and only 4 other ingredients, the whole thing was really simple.

We swapped out lemon cake mix for regular yellow cake mix, because we were worried that the cake might have too strong of a lemon-y taste, but next time, I'd stick with the lemon cake. The yellow cake was good, but the lemon pudding flavor was not overpowering by itself, by any means, so next time, lemon wins!
Special thanks to my mom and sister for the encouragement and help with the cake, and a very
happy birthday to my wonderful dad! Check out last year's birthday post for my dad
